Potato & Egg Bake
6 medium potatoes, washed, dried and thinly sliced
2 onions, diced
12 eggs, scrambled
1/2 C milk (optional)
1 C shredded cheddar cheese
Sauté onions in butter or oil. Once caramelized, add potatoes and cook until tender. Pour in scrambled eggs. Top with cheese. Bake in 350F oven until eggs are set, around 15 minutes.


Easy Potato Soup
10 potatoes, washed and cubed
1 lb breakfast sausage, browned
4 C chicken stock
4 C water
1 C half and half
Choice of toppings

Brown sausage and drain fat. Add potatoes, stock and water. Simmer for 30 minutes, or until potatoes are tender. Add half and half and stir well. Serve warm with choice of toppings.

Vegetable Beef Soup
1 lb ground beef, browned
4-5 large carrots, diced
5-6 potatoes, diced
1 large can diced tomatoes
2 C water
1 can green beans
2 tsp salt
1 tsp garlic powder
2 tsp Italian seasoning
(I didn’t count the water or seasonings in the ingredient total 🙃)
Brown hamburger and drain if needed. Season with seasonings. Add all other ingredients. Simmer for 30 minutes.
Serve warm with homemade cornbread or crackers.

Fall Pork & Veggie Dinner
1 lb diced pork tenderloin
3 carrots, diced
6 potatoes, diced
3 apples, diced
1 C apple juice or apple cider
Brown pork in skillet.
Add all ingredients to crock pot and cook on low for 6 hours, high for 4.
