If you look under your preferences -- editing you will notice a duplicate data section
By default "material" is disabled which means your materials will be linked for each object
This means that if you change one material, both object's materials will change
However, if you enable this option, the materials are duplicated
This means that each object will have its own material (duplicated from the original object) and each object can have its own individual material
