If you follow me on Instagram [@_nomarama_ ] then you may have seen my post where I came across a giant cluster of Chicken of The Woods Mushrooms on a recent hike one morning with my daughter.

Naturally I was super stoked about the find but even more so I was excited to get it home, clean it and try my hand at preparring it for breakfast for the fam.

Not only did it turn out delicious but almost the entire fam got in on it... Lennon, my oldest son, even came back for seconds!

Chicken of the Woods Mushrooms are amazing! Not only are they a vibrantly & beautifully colored fungi, they are also INCREDIBLY beneficial to our health.

Packed with body boosting tings like potassium, vitamin C, fiber, vitamin A, this fungi (like many others) is a super food!

They also have antioxidant, antibacterial, anti-inflammatory, anti-carcinogenic, diabetes and hormone-regulating properties as well bruh 🤯
