How does Sansa Stark die in the A Song of Fire and Ice books?
Sansa does not die in the books. She sticks to "Courtesy is a lady's armour" and holds to it blindly and dearly and this in the end is what helps her survive her ordeal and keep her life in King's Landing. Many people give credit to Arya for being a survivor, but overlook Sansa's survival. To be honest Arya escaped, knowing she would not survive in King's Landing - her defiance and her willfulness would have been the end of her in the Red Keep. Similarly Sansa would not have been able to survive as a homeless wanderer the way Arya does. So she does the next best thing - stay back and armor herself in courtesy so that no one sees the real things she feels and can pretend to be whatever is expected of her in order for her to survive.

Sansa's not dead yet. In the books she has escaped from King's Landing with the help of Little finger, where he's plotting to get her married to Harry Hardying, the heir to the Vale after Sweetrobin. She's alive and well.
In the show she has gone to Winterfell from the Vale, where Little finger marries her to Ramsay Bolton. After enduring Ramsay's torture for days she finally jumps off the wall of Winterfell with Theon into the snow. However, it is implied and later confirmed by D&D that she has survived the fall.
It is my opinion that she won't die. She'll live through the series.
Sansa's a survivor, did you not realise it yet?
She hasn't died, yet, but I think that Little finger will arrange a marriage between her and Aegon, thus uniting(at least in theory) the North, the Riverlands, the Stormlands and the King's Land. Aegon will sit on the Iron Throne. Cersi will retreat West, after hiding many caches of wildfire in strategic points of the city.
At some point Daany with Drogon will invade. And the dragon fires will accidentally set off thousands of wildfire cannisters causing King's Landing(and Sansa) to blow. At this point she will either be dead or she will be horribly disfigured. Out of the wreckage will stride a dark figure.
