Making Persian Shevid Polo (rice with dill) with whole grain rice & wholemeal bread Tahdig
3 cups whole grain (brown) rice
1 cup freshly chopped dill
1 tsp ground saffron
1/2 cup oil
1 wholemeal bread
1 tbsp salt (add to boiling water)

Method
Wash & Soak the rice for 2 hrs
Boil the water
Add salt to boiling water
Drain the rice and add it to boiling water
Let it cook for 10 min or until is half cooked
Off the flames and add a bunch a fresh dill
Drain
Add oil to pot
Place the bread in the bottom of the pot
Add half of the rice
Add fresh dill
Add the rest of the rice
Pour saffron water
Wrap the lid with tea towel
Low flames let it brew for 40 min

Saffron water
Add 1/4 cup boiling water
Add 1 tsp saffron
Add 1 tbsp oil
