If you're having trouble connecting your first gen AirPods Pro (or possibly any bluetooth headset/headphones) to Ubuntu, this video may be helpful.
In this video we replace the default PulseAudio server with PipeWire and WirePlumber to restore total output and input (listening and microphone) capability to the AirPods Pro in Linux (Ubuntu).

Rollback commands for PulseAudio:
systemctl --user unmask pulseaudio
systemctl --user --now enable pulseaudio.service pulseaudio.socket
