Welcome to my channel! Today, I'm excited to share a cozy and delicious recipe for Apple Cinnamon Muffins. These muffins are soft, spiced with cinnamon, and packed with juicy apple pieces, making them the perfect treat for any time of the day.
Let's dive right in!
Ingredients (6-8 Muffins):
56 grams of butter (about 1/4 cup)
75 grams of sugar (about 1/3 cup)
1 egg
1/2 tsp vanilla extract
40 grams of plain yogurt (about 2 1/2 tbsp)
110 grams of all-purpose flour (about 3/4 cup)
1 tsp baking powder
1/4 tsp salt
60 ml of milk (about 1/4 cup)
1 apple, peeled and chopped
1/2 tsp ground cinnamon
20 grams of brown sugar (about 2 tbsp)
Prepare the Batter:
1. In a large mixing bowl, cream together 56 grams of butter and 75 grams of sugar until light and fluffy.
2. Add 1 egg, 1/2 tsp vanilla extract, and 40 grams of plain yogurt to the butter-sugar mixture. Stir until smooth.
3. Sift together 110 grams of all-purpose flour, 1 tsp baking powder, and 1/4 tsp salt.
4. Gradually add the dry ingredients to the wet mixture. Stir for 10-15 seconds.
5. Pour in 60 ml of milk and continue stirring for 15-20 seconds until just combined.
6. Gently fold in the chopped apple.
Bake the Muffins:
1. Preheat the oven to 350°F (180°C).
2. Line or grease a muffin pan.
3. *Spoon the batter into the prepared muffin cups, filling each about 3/4 full. Sprinkle the tops with 20 grams of brown sugar and 1/2 tsp ground cinnamon for a caramelized finish.
4. Place the muffins in the preheated oven and bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
Once the muffins are done, let them cool in the pan for a few minutes, then transfer to a wire rack to cool completely. Enjoy these warm, cozy Apple Cinnamon Muffins with a cup of tea or coffee!
