To Make Mango Pickle

Raw Mango - 1 No.
Mustard Seeds - 1 Tsp
Fenugreek Seeds - 1 Tsp
Red Chilli Powder - 4 Tbsp
Salt - 2 Tbsp

For Tempering

Gingelly Oil - 1/2 Cup
Mustard Seeds
Garlic Cloves
Red Chillies
Asafoetida Powder - 1/4 Tsp
Curry Leaves

Method:

1. Take mustard seeds and fenugreek seeds in a pan.
2. Dry roast them on a medium flame until they are slightly golden brown in colour.
3. Turn off the stove, cool them down completely and grind them into a fine powder.
4. Chop the mangoes into even sized pieces and put them in a bowl.
5. Add red chilli powder, salt and the ground fenugreek, mustard powder to it.
6. Mix it all well and keep it aside.
7. For the tempering, take gingelly oil in a pan.
8. Add mustard seeds, cloves, red chillies and asafoetida powder.
9. Once the mustard seeds start splattering, turn off the stove and add in the curry leaves.
10. Mix the tempering with the pickle and let it sit aside for atleast 1 hour to let the flavors blend in.
11. Spicy, tangy Instant raw mango pickle is ready to be served.
