Known as Dojou Nabe, this is a nabemono dish, pond loaches, small fish that live in ponds and slow moving bodies of water across Japan (but especially in the surrounds of Tokyo) are prepared by being killed, then cold soaked in sake, before being cooked in sweet and spicy sauce and garnished with spring onion, it’s a traditional dish best eaten in the Honjo-Azumabashi Station area. I ate it at the Hirai restaurant and it was delicious.
