Eggplants are rich in fiber, vitamins (especially B1, B6, and K), and antioxidants such as nasunin, which is found in the skin and helps protect cells from free radical damage. The fruit is often used in cooking to make stews, casseroles, spreads, and sauces such as the famous French ratatouille or the Middle Eastern dish baba ganoush.
Eggplant requires a warm climate to grow, and the plant is sensitive to frost, so it is often grown in greenhouses in colder regions. The variety of varieties and culinary flexibility of eggplant have made it a favorite vegetable in many cultures around the world.
