Pork roast with potato, carrot and green pea cooked in clay pots and flavoured with a meat broth and aromatic spices and herbs – tasty and mouth-watering meal for your dinner.

Ingredients:
• pork – 600 g
• carrot – 200 g
• potato – 450 g
• bulb onion – 350 g
• fresh frozen green peas and beans – 100 g
• meat broth – 450 ml
• vegetable oil – 3 tbsp
• salt – 1½ tsp
• peppercorns – 15
• sweet paprika – 1½ tsp
• coriander – 1½ tsp
• small bay leaves – 3
• dried thyme – 1½ tsp
• garlic – 3 cloves
You will need:
• carving board
• pan
• cooking ceramic pots
Preparation:
1. Cut the meat and potato into dices of about 2*2 cm.
2. Cut the carrot and bulb onion into half rings.
3. Heat a pan, add 1 tbsp of vegetable oil and fry the meat over high heat until golden brown for about 5-6 minutes. Take the fried meat out.
4. Add 2 tbsp of vegetable oil into the heated pan and fry the bulb onion over medium heat for 4 minutes.
5. Lay the meat on the bottom of each ceramic pot, distribute the half of all fried onion into each pot and put a bay leaf.
6. Then follow with potato, salt with ½ tsp and add 5 black peppercorns and a garlic clove.
7. Follow with the carrot, green pea and second layer of the fired onion.
8. Pour 150 ml of the broth into each pot.
9. Put the pots with all that stuff into the oven, switch 180°C mode on and bake for an hour. Thirty minutes in advance of baking pour cold water into the ceramic pots to soak clay. Pots are to be placed into cold oven and only then a heat should be on. Your pork pot roast is ready.
Advices:
1. If your ceramic pots are new then before cooking it is necessary to fill them with water, place into oven and bring water to a boil. Then let them cool down. It is done to not have any off-flavors in cooked meals.
2. Before cooking this recipe fill pots with water and leave for about 15 minutes. Thus pots clay will be soaked with water and you’ll have more juicy meal.
3. Fill only 2/3 of a pot volume, it will prevent from splashes during cooking.
4. It is important to use lids. If your pots have no them you can make a dough lids. Dough will soaked with juice and aroma of your pot roast and become an excellent side dish.
