4 1/2 cups of unbleached AP flour
1 1/2 tbsp brown sugar
1 1 2/3 cups of warm water
2 tsp active dry yeast
1 1/2 tsp salt
Instructions:
In a small bowl, combine warm water and sugar.
Sprinkle yeast over the water and let it sit for 5-10 minutes until it becomes frothy.
In a large mixing bowl, combine flour and salt. Pour the activated yeast mixture into the flour. Knead the dough until it's smooth and elastic.
Place the dough in a greased bowl, cover it with a damp cloth, and let it rise for about 1 hour or until it doubles in size.
Preheat your oven to 350°F (177°C).
Punch down the risen dough and divide it into 8 equal portions. Roll each portion into a ball, let rise for 15 minutes then poke a hole in the center and shape into a bagel. Place on parchment paper cover and let rise for additional 30 minutes
Bring a large pot of water to a boil. Add barely malt syrup or honey. Boil each bagel for 30 seconds-1 minute per side. This gives them the classic chewy texture.
Place boiled bagels on a baking sheet lined with parchment paper. Brush with egg wash, add desired toppings. Bake in the preheated oven for 20-25 minutes or until golden brown.
Allow the bagels to cool on a wire rack before slicing and serving.
