Making a lacto fermented mango habanero salsa in a vacuum sealed bag is such a great way to explore the world of fermentation. I find that certain recipes do better using the vacuum sealed bag method, this bing one of them. Super easy to make, the hardest part is waiting for the salsa to be done.
