In culinary the earliest records of sorrel go back to XII century in France. In Russia sorrel had been added to dishes just recently in the last century.
Sorrel is a diet and low-calorie product. It has just 22 calories in 100 grams and boiled sorrel has 20 calories in 100 grams. Its pleasantly sourish fresh taste gives rich opportunities in cooking – green salads and appetizers, piquant sauces and gravies, stuffing for baking, healthy kissels and cool drinks. Cold and hot soups are cooked with sorrel leaves.
We offer you to cook a sorrel soup with smoked chicken breast. This video recipe shows the difference from usual process of soup cooking – first vegetables with potato and chicken breast are fried, and a soup combined with sorrel gets unique taste and flavor.

Ingredients:
• fresh sorrel – 200 g
• smoked chicken breast – 350 g
• garlic – 2 cloves
• bulb onion – 150 g
• carrot – 100 g
• potato – 200 g
• eggs – 2
• water – 2 l
• vegetable oil – 2 tbsp
• salt – to taste
• ground black pepper – to taste
You will need:
• stockpot
• grater
• carving board

Preparation:
1. Dice the onion finely, chop up the garlic.
2. Heat the vegetable oil in the stockpot, fry the onion and garlic over medium heat for 3 minutes.
3. Meanwhile dice the potato, add to the stockpot and fry over medium heat for 5 minutes stirring occasionally.
4. Grate the carrot coarsely, add to the pot and fry for 5 minutes more over low heat.
5. Dice the chicken breast and put into the stockpot, add the salt, ground black pepper and stir, then add 2 l of water, bring to a boil and cook over low heat for 10 minutes.
6. Shred the sorrel, add to the soup and stir.
7. Whisk 2 eggs and pour in the soup by thin jets stirring constantly, switch off the stove. If needed add some salt and pepper to taste. Serve the sorrel soup with sour cream.
