The main thing is that it should be sharp, large and without a safety guard on the heel (more on that later).
To save the knife, it is enough to sharpen it every day just a little bit.
You don't need to sharpen knives too much either. There is a risk of overshooting and spoiling the blade - it will become blunt.

To begin with, it is better to buy a simpler knife and check how it fits, whether it is possible to keep an eye on it. And then buy an expensive one that will last a lifetime!
