We are making a protein-packed and flavor-filled vegetarian meal that's perfect for any occasion! In this video, we'll show you how to make Spicy Chickpeas with Garlic Yogurt Lentils, a next-level dish that combines spicy chickpeas with hearty green lentils, whole wheat and fresh parsley with a creamy garlic yogurt. The more common version is made with orzo pasta instead of whole wheats, but I thought whole wheat adds more texture to the dish.

Ingredients:
• 1 cup green lentils
• 1/2 cup whole wheat
• 1/2 cup chopped fresh parsley
• 2 cloves of garlic
• 1.5 cup full fat strained yogurt
• 1/2 tsp black pepper
• 1 tsp salt
Chickpea topping
• 1.5 cup cooked chickpeas, 250 g, skins removed
• 1 medium onion
• 5 tbsp extra virgin olive oil
• 1 tbsp chili / red pepper paste (biber salcasi)
• 2 tsp paprika powder
• 1 tsp chili flakes (pul biber / Aleppo peppers)
• 1/2 tsp ground cumin
• 1 tsp salt (or to taste)
Instructions:
1. Soak the wheat in water overnight and cook for at least 1 hour until soft, but not mushy
2. Rinse the green lentils and cook for 20 mins until softened
3. Drain and let the wheat and lentils cool down, transfer into a mixing bowl
4. Finely chop the parsley and pound 2 garlic cloves with 1 tsp salt
5. Add the parsley, garlic into the bowl, together with 1/2 tsp black pepper and 1 cup yogurt
6. Mix the ingredients well to combine and transfer and layer into a serving plate
7. Chop 1 medium onion and peel the skins of the cooked chickpeas
*If using dried chickpeas, soak in water overnight and cook until softened with 1/2 tsp sodium bicarbonate
8. Heat up 4 tbsp olive oil in a large pan or skillet, add the onions and sautee until softened
9. Add 1 tbsp chili paste, stir and cook 2 mins until the paste is fragrant
10. Add the cooked chickpeas, 2 tsp paprika powder, 1 tsp chili flakes and 1/2 tsp cumin
11. Stir and sautee for 2 mins until the spices are fragrant
12. Add 1/3 cup hot water, stir and cook over medium heat for 10 mins or until the water is evaporated
13. Add the spicy chickpeas over the lentil mixture, drizzle the remaining spicy oil on top and serve
